:: Ensalada de Nopales ::

Fogive my diversion into food prep today but its what I feel like sharing...
Here's a little something delicious (and vegan) that I made tonight. Nopales is cactus, I bought mine at a tiny market in Anaheim, make some Pico de Gallo salsa wih fresh tomatoes, cilantro, etc. Trim and boil the nopales, rinse them, cool them, add to pico de gallo and stir. I love Nopales with boiled beans and corn tortillas, tonight I had some ripe avocados some this was a dream meal for me, heaven.
